Tapas: Beets, walnuts and feta cheese & Baked eggs

We love Tapas, there are so many options and some so easy to prepare. You can just serve them with bread and you have an amazing meal. Tapas are also perfect food to prepare when you have friends invited for dinner. This recipe has for two vegetarian options that you can easily prepare.

Ingredients

For the Beet Tapas:

  • 1 beet (100-150 g approx.)
  • Salt
  • 2 tbsp of walnuts
  • 1 package of Feta cheese (100-150 g approx.)

For the baked eggs:

  • 2 eggs
  • 2 tbsp Crème fraîche
  • 1 tbsp cream
  • Pinch of salt, pepper and nutmeg
  • 1 tbsp grated parmesan cheese
  • 1/2 tsp of chopped dill (fresh or dried)

Instructions

For the Beet Tapas:

  1. Boil approx. 500 ml of water. Wash the beet, and put it on the pot with the boiled water and add a bit of salt. Cook it for approx. 30 minutes or until it is soft inside.
  2. Once it’s cooked, take it out of the water, peel it and cut it in small pieces or slices.
  3. Roast the walnuts in a non-stick pan on a low temperature for aprox. 3 minutes (without oil!!!)
  4. Choose a Tapa plate (there are special ones, but you can use any plate or small bowls that you can put on the oven).
  5. Preheat the oven to 180°C.
  6. Cut the cheese in small pieces. Add pieces of beets to the plate, then pieces of cheese and repeat. At the end add the roasted walnuts.
  7. Bake for approx. 15-20 minutes or until the cheese it’s soft.

For the baked eggs:

  1. Mix the Crème fraîche with the cream and the spices. Split the mix in two small bowls or Tapas plates. Add one egg (on each bowl/plate) and sprinkle a pinch of salt. Add some grated parmesan.
  2. Bake the eggs for approx. 10-12 minutes or until the egg whites are cooked (the egg yolks should still be runny).

Serve both Tapas straight away together with some crusty bread of your choice.
